— As the founder of Blak Stoc, an extremely successful cider brand from Austria, Karl Karigl has already received numerous national and international awards for his adventurous must creations and has positioned his product in top gastronomy (www.blakstoc.com). As a qualified food technologist, he understands the sequences and processes in food processing and knows what the essential factors are in order to control them in a targeted manner and with little effort.
DAY 1 - 16.10.2021

— Good quality starts with the harvest. We start the workshop hands-on and test the latest fruit string Silver Fox 03 from Organic Tools together with the sorting table and see what a contemporary, upright harvest process for high-quality must production can look like. We then go through the entire process from preparation to preparing the fresh sweet must. In preparation for Day 2, a wide variety of recipes and approaches are tried out.

DAY 2 - 02/19/22 (postponed from 11/27/21)
— Off to the basement! After preparing various creations, it is now a matter of fine-tuning. We learn from the experiences of the first day and analyze the resulting intermediate products. What else can I control from here and which special additives only make sense as an addition at the end of fermentation? The issue of hygiene also plays a central role here. Karl can sing a song about it.
